Let me begin this by saying, I hate raisins. Honestly. But when a friend wanted me to make oatmeal raisin cookies for her baby shower, I knew I had to create an amazing recipe to counter act these little grape carcasses.😉
These cookies made me almost forget my undying hatred (maybe a little exaggerated, but still) of those teeny little devil seeds.
These cookies have an awesome texture, are soft, and will make you fall in love with oatmeal raisin cookies.
1 cup melted butter (cooled for 5 minutes)
1/2 cup granulated sugar
1 cup light brown sugar, packed
1 tbsp vanilla
1 tsp cinnamon
1/2 tsp salt
1/2 tsp baking soda
1/2 tsp cornstarch
2 cups (heaping-ish) unbleached all purpose flour
1 1/2 cups old fashioned oats
1 cup raisins
Preheat oven to 375 F
Line baking sheets with parchment paper
In stand mixer, cream together melted butter and sugars until well combined
Add vanilla, eggs, and cinnamon
Cream until light and fluffy
In separate bowl, combine flour, salt, baking soda, and cornstarch. Wisk.
Add dry ingredients to mixer mix until just combined. Add oats, and raisins. Mix until just combined. Do not overmix!
Chill for 30 minutes
Roll into balls and place on baking sheet. Bake for 8-9 minutes. Cool on sheet for 3 minutes, transfer to cooling racks.
* note I live at over 5,000 feet. If you live in a lower elevation, I suggest leveling your flour, and lowering your temperature to 350 F
