One of our all time favorites in our house is oatmeal chocolate chip cookies. Coming home from our trip, my husband was missing home cooked meals and treats. So, he asked if I could bake him some cookies. I decided to go with our oldie, but goodie, chocolate chip oatmeal cookies.
They are chewy, soft, and delicious!
1 cup butter (melty)
1 cup packed brown sugar
1/2 cup white sugar
1/2 tsp cornstarch
3/4 tsp baking soda
1/2 tsp cinnamon
1/2 tsp salt
2 cups (heaping-ish) unbleached all purpose flour
1 cup old fashioned oats
1 cup chocolate chips (I used half dark and half semi sweet)
Preheat oven to 375°F, line cookie sheets with parchment paper
In a stand mixer-Cream together butter and sugars. Add eggs and vanilla, mix until fluffy.
Combine flour, salt, baking soda, cornstarch, and cinnamon in separate bowl, wisk.
Add dry ingredients into mixer. Mix until just combined, add oats, mix until just combined. Do not overmix!
Fold in chocolate chips.
Chill dough for 30 minutes. Roll into balls, and place on baking sheet about an inch apart.
Bake for 8-10 minutes. Let cool on baking sheet for a few minutes and then transfer to cooling rack.
*note: I live at above 5,000 feet. I would recommend leveling flour, and turning the heat down to 350°F for lower elevations.
