Perfect Classic Chocolate Chip Cookies

This has been a major work in progress. I, once again, love chocolate chip cookies. I’ve been trying out many recipes, looking for the perfect go to chocolate chip cookie recipe. That will always be good. 

These are it.

Tasty, chewy, and plenty of chocolate.


2 large eggs

1 cup unsalted butter (melty-ish)

1 cup brown sugar

1/2 cup white sugar

3 tsp vanilla extract

2 1/4 cups unbleached all purpose flour  (heaping-ish)

1/2 tsp baking soda

1/4 tsp baking powder 

1/4 tsp cornstarch 

1/2 tsp kosher salt

1/2 tsp cinnamon

1 bag semi sweet chocolate chips


Preheat oven to 375°F 

Combine butter and sugars in stand mixer until light and fluffy 

Add eggs and vanilla mix until combined.

In separate bowl combine flour, salt, cinnamon, baking powder, baking soda, and cornstarch. Wisk together.

Add dry ingredients to mixer. Mix until just combined. Do not overmix!

Fold in chocolate chips with spatula.

Refrigerate for 1-2 hours

Roll dough into balls, and place on parchment lined baking sheets.

Bake for 7-8 minutes, until sides are just Browning.

Let cool on pan for 3 minutes, move to cookie rack to cool completely.

*note: I live at over 5000 ft. For lower elevations, I suggest leveling flour and lowering oven temp to 350°F
