So I think everyone has had leftover bananas, that we know aren’t going to get eaten. Most of the time, you think of banana bread.
Well, let me tell you, these cookies are like banana bread mixed with cookie heaven.
I love peanut butter in baked goods, so I absolutely loved throwing it in here. It’s a subtle taste, but gives the cookies a nice comfort, if you will.
These cookies are super moist and cake like. The perfect combo of banana bread and cookie!
2 bananas ripe, mashed
1/3 cup creamy peanut butter
1 cup peanut butter chips
1 cup semi sweet chocolate chips
1/2 cup butter, melty-ish
1/4 cup granulated sugar
1 cup brown sugar, packed
2 1/2 tsp vanilla extract
1 tsp baking soda
1 tbsp cornstarch
1/2 tsp salt
2 cups flour (heaping-ish)
Cream bananas, sugar, butter and peanut butter together, until light and fluffy. In a stand mixer.
Add vanilla extract, mix until combined.
In separate bowl, mix dry ingredients together with a wisk.
Add dry ingredients into mixing bowl, mix until just combined. Do not overmix!
Fold in peanut butter and chocolate chips with spatula.
Chill for an hour.
Preheat oven to 400°F
Line cookie sheets with parchment paper.
Use teaspoon to spoon dough onto cookie sheet.
Bake for 10-12 minutes, or until turning golden. Remove, let cool on cookie sheet for about 5 minutes, transfer to cooling rack.
*note: I live at over 5000ft, if you live at a lower elevation, I suggest lowering temperature to 375°F and leveling flour off.
