Tuesday taco night? How about Tuesday Taquito night?
These are delicious, creamy, and crunchy.
The chicken cooks in the crockpot, and then you bake them rolled up in delicious tortillas to create that Taquito crunch.
1lb boneless skinless chicken tenderloins
6 oz cream cheese
1/2 jar salsa
1 tsp garlic
1 tsp onion powder
1/2 tsp salt
1/4 teaspoon cumin
1/2 teaspoon chili powder
1/4 tsp cayenne pepper
1 cup Mexican blend cheese
Taco sized tortillas
Spray crockpot thoroughly with non stick spray
Place chicken in crockpot with spices, cream cheese, and salsa
Cook on low for 3-4 hours/ High for 1-2 hours
Preheat oven to 400°F
Shred chicken with forks, and mix crockpot ingredients thoroughly.
Place a small row of mixture in tortilla, top with however much cheese you want. Roll tightly, and place on aluminum foil lined baking sheet, sprayed with non stick spray.
After all tortillas are filled, rolled, and on the baking sheet, spray tops generously with non stick spray.
Bake until tops begin browning. About 15-20 minutes.
